Homemade Buttery Biscuits (Low Carb Recipe)

Yum
Ingredients
  • 1 1/4 Cup - Almond Flour
  • 3 Large Eggs
  • 2 TBS - Butter
  • 1 tsp - Baking Soda
  • 1/4 tsp - Salt
Directions
  • Cut butter into small cubes and place into freezer for 10 minutes, it must be ice cold.
  • In a large bowl combine almond flour, baking soda and salt. Mix well.
  • Using a pastry cutter or whisk, cut in the ice cold butter.
  • In a separate bowl using a hand mixer or whisk, thoroughly whip the eggs until frothy (light and airy).
  • Fold eggs into flour mixture until it forms a sticky dough.
  • Using an ice cream scooper or spoon, drop the dough onto a lightly greased or non stick surface and then bake in a pre-heated 400ยบ oven for 12-14 minutes or until golden.

  1. If it helps you can use a cheese grater on frozen butter, then you can just mix it in without having to break it up with the whisk. I can't take credit though, I saw this on a cooking show :)

    2. On keto diet.
      First decent recipe I've found for spreading double cream brie on something that wasn't mealy and gross.
      Bumping fat intake with negligible carbs is awesome!
      Making them AGAIN tonight, along with your low carb pizza crust.
      Tweaking the procedure a bit for the pizza. Trying to make (half) the crust in advance so I can top it later in the evening for late night dinner. Seeing if it holds up to sitting for a while. Was going to try making the second half and holding it in the refrigerator, but decided it's kind of a useless idea as I can just hold the half of the batter without cooking for a long time.

  6. Can I use baking powder instead of baking soda ??

  7. I bought King Authur finely ground almond flour just for this recipe. Followed the recipe correctly, baked them for 12 minutes and they taste very bitter. They are a bit more browned than yours but that appears to be the only difference. Why the bitter flavor? This is the second recipe I've tried using almond flour (pancake recipe with bob's red mill) and that one came out bitter too. What gives?! I was so wanting to LOVE these and they are inedible.

    1. Sorry you weren't able to enjoy them, BUT I think the problem is with your baking soda and not the recipe. Your baking soda could be bad or you simply may have a sensitive taste to it and not care for it. Try making the pancake recipe or the biscuit again and try using baking 'powder' instead of baking soda and see if that gets rid of the bitter taste. If it does not, it could be the flour but I doubt it. Please let me know if this helps! Thank you!

    2. it could also be the browning. Almond flour is bitter when scorched. If you are used to having very brown flour biscuits, this won't work with almond flour.

    In my country we don't use cups for measuring, so I would like to ask you how much grams (or whatever other size you have) of almond flour you use? :)

    1. When a recipe doesn't include the grams, I just google the conversion: cups to grams. Hope that helps!
