Ingredients
- 3-4 - Medium Yellow Squash (sliced 1/2")
- 1 - Large - Vidalia Onion (sliced 1/2")
- 1 Stick - Butter
- 1/2 tsp - Salt
- 1/2 tsp - Black Pepper
Directions
- Melt butter in a large skillet over medium low heat.
- Add onions and sauté 5 minutes or until they begin to soften.
- Add squash, salt, pepper and mix.
- Cover and cook over medium low heat for 15 minutes.
- Stir and continue cooking until desired tenderness is reached.

My late mother used to cook the absolute BEST squash! She died at age 80 in 2006. Over the years, I asked her sisters if they knew her recipe. A couple of them said yes, and shared their recipes with me. Unfortunately, none of them came as close as this one from the Wolfe Pit! Finally, I can enjoy some squash "like Mama used to cook it!!!!"
