Scotch Eggs

It doesn't get any simplier than this.......

What you will need:

1lb bulk breakfast sausage
3-4 hard boiled eggs
Wolfe Rub Original (optional)

Break the breakfast sausage into 3-4 equal portions and form over the hard boiled egg to completely cover the egg with a uniform thickness all the way around.  Liberally coat in rub.  Place on the smoker or grill and cook in the 245º-260º range for approximately 45minutes to 1 hour, until the sausage is thoroughly cooked.  You can do these on a broiler pan in the oven too if you prefer.




Let cool slightly, slice and serve.

  1. Here is a tip about scotch eggs....

    After preparing them, stick them in the fridge for an hour or so. This allows the sausage to really take hold of the mold around the egg. Reason you do this is so the sausage doesn't split open exposing the egg during the cook.
