Deep Fried Hot Sauce (copy cat recipe) - Chicken Charlies Deep Fried Hot Sauce

Ingredients
  • 1 box - Jiffy Corn Muffin Mix
  • 1/4 Cup - All Purpose Flour
  • 1 - Egg
  • 1/3 Cup - Frank's Red Hot Sauce
Directions
  • Combine all ingredients in a large bowl and mix, then let sit for 10 minutes.
  • Using a small ice cream scoop or two spoons, scoop out batter and deep fry in 350º oil for 2-3 minutes or until golden brown and cooked through.
Dipping Sauce
  • Combine equal parts Ranch dressing with Frank's Red Hot Sauce.
Jalapenos
  • Place jalapenos in a dry skillet over medium high heat flipping every 30 seconds for 10-15 minutes until they are charred and begin to soften.

Beef Chuck Rolls

I did an 'Iron Chef contest' a couple years ago and the foods that we HAD to use were 7 bone chuck roast, serrano peppers and spinach, the rest was up to our imagination.  Here's what I came up with and they came in 2nd place! 

I seared a 7 bone chuck roast naked, then liberally doused with WRB, put into a pan and cooked in the smoke for another hour, then foiled the pan untl the meat was tender

Then I grilled a head of cabbage, red onion and the serranos. Then julienned those. I blanched and chopped baby spinach and baby carrots. Mixes all the ingredients plus some garlic, salt and pepper. I then mixed the meat and veggies and placed in the fridge to cool.

I then made a dipping sauce which consisted of Reverend Marvins Hot BBQ Sauce, Brown Sugar, Soy Sauce and Sesame Oil. Brought to a boil and reduced by 1/4.

Filled egg roll wrappers with the chuck/veggie mixture and deep fried until golden brown. They turned out much better than expected!!!

Lamb Sliders

These are amazingly good and very simple.

What you will need:

  • 2lbs ground lamb
  • 1/2 cup - Feta Cheese
  • 1 small onion diced
  • 3-4 Garlic Cloves (minced)
  • 3 TBS - Fresh Oregano (chopped)
  • 2 Roma Tomatoes Sliced 
  • Kosher Salt and Fresh Cracked pepper to taste.

Tzatziki Sauce
  • 16 ounces (2 cups) of thick Greek yogurt
  • 4 to 10 cloves of garlic, finely chopped
  • 1/2 cup of diced or grated cucumber (Kirby or "English")
  • 1 tablespoon of olive oil
  • 2 teaspoons of lemon juice
  • 2 teaspoons minced mint (optional)
Combine oil and lemon juice in a medium mixing bowl. Fold the yogurt in slowly, making sure it mixes completely with the oil. Add the garlic, according to taste, and the cucumber. Stir until evenly distributed. Garnish with a bit of green and serve well chilled.

2lbs Ground Lamb


Add Feta, garlic, oregano, salt, pepper and onion and mix together, but do not over mix or your burgers will be tough. 


Form into patties about 1/2" bigger than your buns to allow for shrinkage.  Again, do not overwork the meat when forming or you'll have a very dense, tough burger.


Grill over moderate direct heat for 2 minutes per side. (chicken was part of the other party food)


 

Lamb is done


Serve each slider with a slice of tomato and a healthy dollop of Tzatziki Sauce


 

Hot Spinach and Artichoke Dip

Spinach and Artichoke Dip
2 - blocks of cream cheese
1/2 cup - mayonnaise
1/2 cup - parmesean cheese
1/2 cup - mozzarella cheese
1 - Family size bag of spinach or 12oz fresh
1 - 14oz Can Artichoke Hearts (jullienne)
2-3 garlic cloves (minced)
2 - TBS Olive Oil
Salt and Pepper to taste

Directions:
In a non-stick pan sautee minced garlic cloves in 2 TBS Olive Oil for approximately 30 seconds, then add all of the spinach and season with salt and pepper. Briefly cook spinach, just until it's wilted down and remove from pan, and roughly chop. Reduce heat to low and add cream cheese stirring often, just until it's melted, then fold in the mozzarella and parmesean cheese, until all of the cheeses have combined. Remove the pan from the heat and add in the remaining ingredients until smooth. If serving right away, place in a 350º oven for 15-20 minute just until heated through or can be microwaved. Or place in the fridge until ready to serve and heat as described above, but for 25-30 minutes.
