- 4 slices - Bacon
- 2 TBS - Bacon grease
- 1 Cup - Vidalia Onion (finely chopped)
- 1 tsp - Butter
- 2 TBS - AP Flour
- 15 oz - Diced Tomatoes
- 1 Cup - Chicken Broth
- 1 TBS - Tomato Paste
- 1/2 tsp - Sugar
- 1/4 tsp - Thyme (optional)
- 1/4 Cup - Whole Milk or Heavy Cream
- Salt & Pepper to taste
Directions
- Fry bacon until crisp in a large skillet.
- Remove bacon and all but 2 TBS of the bacon fat.
- Add diced onion and sauté until translucent
- Add butter and flour and continue to cook until the flour is absorbed
- Add remaining ingredients except milk and bring to a light boil
- Continue to simmer until the tomato gravy has thickened.
- Once thickened add milk and crumbled bacon.
- Serve over biscuits.
