- 1.5-2 lb - Pork Tenderloin
- 1 lb - Bacon
- 18 oz - Apple Jelly
- 1 tsp - Cinnamon
- 1/2 tsp - Cayenne Pepper
- Salt
- Pepper
Directions
- Combine apple jelly, cinnamon and cayenne.
- Microwave for 45-60 seconds and mix well. Set aside.
- Par-cook the bacon in a 350º grill for 5-7 minutes.
- Cut tenderloin into 1.5"-2" thick medallions.
- Wrap each medallion with a piece of bacon. (trim bacon to fit if necessary)
- Season with salt and pepper.
- Grill at 400º for 5 minutes.
- Flip over and baste with the apple jelly mixture.
- Grill at 400º for another 5 minutes or until they reach 135º.
