Sounds amazing, Larry- will be trying this weekend.
ReplyDeleteQuestion: Is it okay to poach for the hour (checking after 30 minutes, as described), in a convection oven, at 350°?
Hi Steve! Yes, definitely check prior to the hour mark, especially in a more controlled cooking environment like an oven. The main thing is you don't really want the wings to boil or over cook. You basically want to barely cook them through without rendering all of the fat out of the skin and it falling apart. Please let me know how you like them! Thanks for watching!

Perfect- thank you so much Larry, I definitely will!
DeleteHey Larry, if I were to cook these in the oven before grilling how should I do it should I cover it or leave it it uncovered and which setting should I leave my oven on?
ReplyDeleteMade these for family in Manhattan Beach tonight. Outstanding recipe. Rave reviews. Looking forward to trying your other recipes. Top notch.
