- 1 lb - Extra Large Shrimp (peeled & deveined)
- 12 oz - Bacon (cut in half)
- 1/4 Cup - Orange Marmalade
- 1/8 Cup - Sriracha Sauce
- 5 - Bamboo Skewers
- 1 - Yellow Squash (cut in half)
- 1 - Zucchini (cut in half)
- 1/4 Cup - Teriyaki Sauce
- 1 Cup - Long Grain Rice
- 2 Cups - Water
Directions
- Combine water and rice in a medium saucepan bring to a boil.
- Stir once, reduce heat to medium low, cover and cook 20 minutes.
- Preheat grill to 350ยบ and set up for direct grilling.
- Drizzle teriyaki sauce over squash and zucchini (set aside)
- Combine orange marmalade and sriracha sauce and mix until well blended. (set aside)
- Wrap each shrimp with half a piece of bacon and slide onto skewer securing both ends of the bacon. (4 Shrimp per skewer.)
- Grill squash and zucchini on the cut side for 4 minutes turning 1/4 turn after 2 minutes.
- Flip squash and continue to grill skin side down for 2 minutes or until desired doneness.
- Grill shrimp 2 minutes with the lid shut.
- Flip shrimp, baste with orange marmalade sauce, close lid and continue to grill 2 minutes.
- Flip shrimp, baste with orange marmalade sauce, close lid and continue to grill 2 minutes. (6 minutes total)
