- 2 lbs - Mussels
- 1 Stick - Butter
- 4 - Garlic Cloves (minced)
- 1/4 Cup - Parmesan Cheese
- 1/2 Cup - Yellow Onion (minced)
- 1/2 Cup - Ham (chopped fine)
- 1/2 Cup - Italian Seasoned Bread Crumbs
- 2 tsp - Fresh Lemon Zest (minced fine)
- 1 - Jalapeno Pepper (chopped fine)
- 1 Cup - Spinach
- 1 tsp - Fresh Lemon Juice
Directions
- In a medium skilled over medium high heat melt butter and saute onions 2-3 minutes
- Add garlic, ham and jalapeno and continue to cook until vegetables are tender 2-3 minutes.
- Add spinach and lemon zest and cook just until the spinach is wilted 1-2 minutes.
- Remove from heat, add Parmesan cheese, bread crumbs and lemon juice, mix until well incorporated and set aside.
- Steam mussels in a metal bowl or pan with 2-3 TBS of water and cover and cook for 5-7 minutes. Just until they open, do not overcook.
- Remove the top shell from each mussel and discard.
- Fill the remaining shell with the mussel with 2 tsp of the filling, continue until all of the mussels are stuff.
- Place on a baking sheet and bake or grill at 350ยบ for 8-10 minutes until golden brown.
