2 lbs - Dry Great Northern Beans (rinsed and drained)
2 lbs - Smoked Ham Hocks or Leftover Ham bone.
1 - Gallon Water (add more if needed)
1 - Yellow Onion (chopped)
3 - Garlic Cloves (minced)
2 - Celery Stalks (chopped)
2 - Carrots (chopped)
2-3 - Bay Leaves
1 tsp - Black Pepper
Salt to taste
Directions
1. In a large pot combine beans and water, bring to a boil for 10 minutes, turn off heat, cover and let soak for 2 hours. DO NOT DRAIN
2. After 2 hours add all of the remaining ingredients to the pot with the beans and water, return to a boil.
3. Reduce heat to med-low and cook for 2.5 hours or until the beans and ham hocks are tender.
4. Taste for salt, add to taste.
