Baked Cod with Dijon Mustard Bread Crumb Crust

2 lbs - Cod Fillets (cut into serving portions 3-4oz)
1 Cup - Dijon Mustard
2 Cups - Italian Seasoned Breadcrumbs
1/2 tsp - Salt
1/2 tsp - Pepper

1.  Dip cod into mustard and scrape off any excess.
2.  Mix bread crumbs, salt and pepper and thoroughly coat cod with bread crumbs.
3.  Place on a lightly greased cookie sheet and bake in a 375ยบ oven for 15-20 minutes until golden brown and flaky.
