8oz - Candy Chocolate
1/2 tsp - Cayenne
15-20 - Pork Skin Pellets
Oil for deep frying
1. Over low hear or in a double boiler combine chocolate and cayenne and melt.
2. Deep fry pork skins in 400º oil for 60 seconds ensuring they are completely submerged in oil.
3. Remove pork skin and place on paper towels and salt liberally.
4. Dip 1/4 of the pork rind into the chocolate/cayenne mixture and place on parchment paper and into the refrigerator for 30 minutes to allow the chocolate to harden.
