Shrimp and Vegetable Linguine Recipe
- 12 oz - Shrimp (I used small, you could use larger)
- 1 lb - Linguine Noodles (cooked al dente') (reserve 2 cups of pasta water)
- 2 - large tomatoes (cubed)
- 1/4 cup - Extra Virgin Olive Oil
- 1/2 cup - red onion (thinly sliced)
- 1 - Red Bell Pepper (sliced)
- 3 cup - Fresh Broccoli Florets
- 4 TBS - Garlic
- 1 TBS - Basil
- 1 TBS - Oregano
- 1 tsp - Thyme
- 1 tsp - Red Pepper Flakes
- 1 tsp - salt
- 1 - Bay Leaf
- 1/2 stick - Butter
Directions
- In a large skillet over medium heat saute garlic and onions in olive oil until they sweat 2-3 minutes
- Add in tomatoes, basil, oregano, thyme, bay leaf, red pepper flakes, salt, 2 cups of pasta water and simmer for 10 minutes
- Add butter, bell pepper, broccoli and shrimp. Cook until shrimp are red 3-4 minutes
- Toss the sauce and linguine together, garnish with Parmesan cheese.
