Shrimp and Vegetable Linguine

Shrimp and Vegetable Linguine Recipe
  • 12 oz - Shrimp (I used small, you could use larger)
  • 1 lb - Linguine Noodles (cooked al dente') (reserve 2 cups of pasta water)
  • 2 - large tomatoes (cubed)
  • 1/4 cup - Extra Virgin Olive Oil
  • 1/2 cup - red onion (thinly sliced)
  • 1 - Red Bell Pepper (sliced)
  • 3 cup - Fresh Broccoli Florets
  • 4 TBS - Garlic
  • 1 TBS - Basil
  • 1 TBS - Oregano
  • 1 tsp - Thyme
  • 1 tsp - Red Pepper Flakes
  • 1 tsp - salt
  • 1 - Bay Leaf
  • 1/2 stick - Butter
Directions
  • In a large skillet over medium heat saute garlic and onions in olive oil until they sweat 2-3 minutes
  • Add in tomatoes, basil, oregano, thyme, bay leaf, red pepper flakes, salt, 2 cups of pasta water and simmer for 10 minutes
  • Add butter, bell pepper, broccoli and shrimp.  Cook until shrimp are red 3-4 minutes
  • Toss the sauce and linguine together, garnish with Parmesan cheese.
