Recipe
- 2 lbs - 80/20 Ground Beef
- 24 - Corn Tortillas
- 28 oz - Crushed Tomatoes
- 1/2 cup - Diced Onion
- 1/2 cup - Diced Bell Pepper
- 3 TBS - Fresh Garlic
- 1 TBS - Black Pepper
- 1 TBS - Minced Dried Onion
- 1 TBS - Granulated Garlic
- 1 TBS - Chili Powder
- 1 tsp - Cumin
- 1 tsp - Salt
- 3-4 Cups - Mexican Cheese Blend
- Fresh or Pickled Jalapenos are optional
Directions
- Brown ground beef in a heavy sauce pan (drain fat if desired)
- Add in Onions, Pepper, Garlic and saute just until they begin to sweat
- Add in crushed tomatoes and remaining spices. Let simmer for 30 minutes
- In a 9 x 13 casserole dish add a thin layer of the meat sauce
- Add 6 corn tortillas on top of sauce
- Repeat with meat sauce and roughly 1/2 cup of cheese 3 more times
- Top layer should be sauce and the add all remaining cheese to the top
- Cover with foil and bake in a 350ยบ for 45 minutes
- Remove foil and continue to cook for another 15-20 minutes until the cheese is golden
