Enchilada Casserole

Recipe

  • 2 lbs - 80/20 Ground Beef
  • 24 - Corn Tortillas
  • 28 oz - Crushed Tomatoes
  • 1/2 cup - Diced Onion
  • 1/2 cup - Diced Bell Pepper
  • 3 TBS - Fresh Garlic
  • 1 TBS - Black Pepper
  • 1 TBS - Minced Dried Onion
  • 1 TBS - Granulated Garlic
  • 1 TBS - Chili Powder
  • 1 tsp - Cumin
  • 1 tsp - Salt
  • 3-4 Cups - Mexican Cheese Blend
  • Fresh or Pickled Jalapenos are optional
Directions 
  • Brown ground beef in a heavy sauce pan (drain fat if desired)
  • Add in Onions, Pepper, Garlic and saute just until they begin to sweat
  • Add in crushed tomatoes and remaining spices.  Let simmer for 30 minutes
  • In a 9 x 13 casserole dish add a thin layer of the meat sauce
  • Add 6 corn tortillas on top of sauce
  • Repeat with meat sauce and roughly 1/2 cup of cheese 3 more times
  • Top layer should be sauce and the add all remaining cheese to the top
  • Cover with foil and bake in a 350ยบ for 45 minutes
  • Remove foil and continue to cook for another 15-20 minutes until the cheese is golden
