Country Style Ribs w/Orange Marmalade Sriracha Sauce


  • 3-4 lbs - Country Style Ribs (shoulder cut, not loin cut)
  • 1/4 Cup - Wolfe Rub Citrus BBQ Rub
  • 14 oz - Orange Marmalade
  • 1/3 cup - Sriracha Sauce
  • 1/3 cup - Honey
  • 1/3 cut - Brown Sugar
Orange Marmalade Sriracha Sauce Directions
  • Combine Marmalade, sriracha, honey and brown sugar in a saucepan
  • Bring to a boil, reduce heat and let simmer for 10 minutes
Pork Directions 
  • Set up grill for indirect cooking with a medium heat (< 300º)
  • Liberally season pork with Wolfe Rub Citrus (this can be done and hour or overnight before hand)
  • Place pork on opposite side of grill and add a couple chunks of apple wood
  • Once the wood begins to smoke, put the lid on and cook for 1.5 - 2 hours
  • Place the pork into a dish, cover with Orange Marmalade Sriracha Sauce
  • Cover with foil and cook at 325º for 30 minutes
  • Remove foil, flip the pork and continue to cook for another 30 minutes or until the sauce has thickened and the pork is fork tender
