Pizza Steak and Seafood

My wife cooked some sirloin tips the other night for herself for dinner and she said they weren't edible cause they were too chewy.  So.........I found a small bag of them in the fridge yesterday while I was working from home.  That's when the light bulb went off and dinner for my daughter was in the makings!  Since we decided we were having fish and scallops, I knew Cathryn didn't really like either.  So I was going to make her a 'Pizza Steak Pizza' with the leftover tough meat.

So I simmered the sirloin tips in beef stock, onions and garlic for most of the day until they were fall apart tender.

Then I picked out the shell.....I eat these things for everything and they work extremely good for pizza and they're only 100 calories! 

Spread a little tomato sauce and Parmesan cheese down first.

Then the meat.  If this were for me I would have added onions, peppers and mushrooms.  But Cathryn said, 'blah' to that suggestion!

Then topped off with a healthy dose of Mozzarella cheese and a little granulated garlic.
 

Then got to my part of the meal and seasoned some nice scallops and a piece of Mahi Mahi with Wolfe Rub Citrus.

Fish and scallops went over direct heat for just about a minute, then flipped the scallops.

Pizza went on indirect.

Scallops are done, fish has about 1 more minute and the pizza is getting there!

Pizza is done and looks great!

The crust was perfectly crisp.

Fish and scallops are ready for ME to devour!

My plate along with Uncle Ben's Whole Grain Brown Rice Medley.  This is now a staple in our house, great for you and 90 seconds in the microwave and it's done!  No adding water, nothing.  Delicious!!
