Tortilla Pizza

It's a rainy Sunday, I'm sitting around inside watching TV and got hungry.  I wanted a quick snack.  Went into the fridge to find GOLD!  I used a whole grain tortilla wrap, leftover marinara sauce, grilled red pepper, grilled onion, spinach, mozzarella and Parmesan cheese from last nights dinner to make a very healthy and VERY delicious pizza!  Pictures don't do this justice.  

Before putting into a 450ยบ oven and adding lots of red pepper flakes.

Ready to enjoy and everything but the wrap was leftover from a previous meal!

  1. Fabulous idea! Did the tortilla get crispy on the bottom like a regular thin crust pizza? Did you put it on a pizza pan or a stone?? I gotta try this one! Fantastic Larry - as always!

  2. Larry - tried this Saturday and it was fantastic! I cooked mine in my Kamado Joe ceramic cooker. I also used two tortillas and put some shredded 4 cheese blend between the two tortillas to "fuse" them together to get a slightly more sturdy but still think crust. Thank you for the idea! We always have tortillas and leftovers so we'll be doing this again and again! Pat
