This is another favorite, creating a meal out of leftovers in the fridge. We had some leftover uncooked sliced sweet potatoes and a tiny bit of uncooked red onion leftover from last Saturday. So I sliced them up along with the remaining bacon and potatoes from last night and made a hash, fried up a couple eggs and voila! A nice hearty breakfast for me and to send my daughter off to school on a cold rainy day! Comfort food at it's best!
