How to make Pork Schnitzel

Pork Schnitzel Recipe

  • 4 - 6oz pork loin cutlets (pounded out to 1/4" thick)
  • 1 - Egg
  • 1/2 cup - All purpose flour (divided by 1/4 cup)
  • 1 cup - Yellow Corn Meal
  • Salt and Pepper to taste
  • 1/2 cup - Vegetable oil
  • 1 - Yellow Onion (thinly sliced)
  • 2 cups - Chicken broth or stock
Directions
  • Season pork on both sides with salt and pepper
  • Combine flour and corn meal
  • Dredge pork pieces in flour and corn meal
  • Pan fry pork in the hot oil 3-4 minutes per side remove from pan to drain
  • Remove all of the grease and corn meal from the pan 
  • Add 2 TBS of butter and saute' the sliced onion just until tender
  • Slowly add in flour to the butter and onion to create a roux
  • Slowly add in chicken broth continuing to stir until slightly thickened
Optional - Add one box of frozen pierogies into the gravy just until cooked though.  Serve the gravy over the schnitzel and pierogies.  Enjoy!
