Pork Schnitzel Recipe
- 4 - 6oz pork loin cutlets (pounded out to 1/4" thick)
- 1 - Egg
- 1/2 cup - All purpose flour (divided by 1/4 cup)
- 1 cup - Yellow Corn Meal
- Salt and Pepper to taste
- 1/2 cup - Vegetable oil
- 1 - Yellow Onion (thinly sliced)
- 2 cups - Chicken broth or stock
Directions
- Season pork on both sides with salt and pepper
- Combine flour and corn meal
- Dredge pork pieces in flour and corn meal
- Pan fry pork in the hot oil 3-4 minutes per side remove from pan to drain
- Remove all of the grease and corn meal from the pan
- Add 2 TBS of butter and saute' the sliced onion just until tender
- Slowly add in flour to the butter and onion to create a roux
- Slowly add in chicken broth continuing to stir until slightly thickened
Optional - Add one box of frozen pierogies into the gravy just until cooked though. Serve the gravy over the schnitzel and pierogies. Enjoy!
